A Thai classic that’s simple, bold, and packed with flavor. Larb Moo (Thai Pork Salad) is the perfect balance of savory, tangy, and fresh. A dish that hits with lime, fish sauce, herbs, and spice, it’s a staple for good reason.

On Chefs Ground Larb Moo (Thai Pork Salad)

Ingredients

5 tbsp uncooked Thai sticky rice (to be toasted and used in the dish)
300g (1 lb) minced pork
½ - 1 tbsp chili flakes (prik bon)
1/8 tbsp sugar (just a pinch)
½ tbsp fish sauce
1 - 2 limes (adjust for acidity preference)
3 - 4 small shallots (Thai shallots are grape-sized; adjust if using larger shallots)
A few leaves of Sweet Thai Basil (available at Thai Supermarket @ Aperia Mall)
3 - 5 spring onions (green onions)
~20 leaves fresh mint

Directions

Toast the rice until golden brown, then grind it using a pestle and mortar or a blender.
Stir-fry the pork in a pan until fully cooked.
Mix in the toasted rice, chili flakes, and sugar.
Add fish sauce, lime juice, mint leaves, and Thai spring onions.
Slice the shallots and mix them in.
Taste and adjust seasoning as needed.
Garnish with mint, Thai sweet basil, and spring onions.
