Peanut Butter Brownie with Skippy

Directions

1. Preheat the oven to 180°C. Grease a square baking pan with baking spray and line it with parchment paper. We opted to grease the pan with butter instead of lining it with parchment paper. This adds a nice crust and enhances the flavor at the bottom!

2. Melt the butter in a small saucepan over medium heat. Remove from heat and whisk in 1/2 cup of chocolate chips until fully melted, then transfer to a large bowl to cool for a few minutes. Alternatively, melt the butter in a microwave-safe bowl, then stir in the chocolate chips until smooth.

3. In a separate bowl, sift together the flour and cocoa powder.

4. Whisk the sugars, eggs, and vanilla into the melted chocolate mixture until smooth. Gradually fold in the dry ingredients until combined, then gently mix in the remaining 1/2 cup of chocolate chips. Pour the batter into the prepared pan and spread it evenly with a spatula.

5. Drop teaspoonfuls of peanut butter over the batter and use a knife or skewer to swirl it through.

6. Bake for 40–45 minutes, or until the center is set and doesn’t wobble when gently shaken. For a fudgier center, bake for 35 minutes. Cover with foil after 25 minutes if the peanut butter starts to brown. Note: If covered, the baking time may extend by 5–10 minutes.

7. Let the brownies cool completely in the pan before slicing. Sprinkle with sea salt and enjoy!
